Sweet Potato Pancakes
To say I love pancakes is an understatement...they are my breakfast soul mate. On days I'm craving pancakes, I like to make this version :)
Ingredients:
-2 eggs
-1 sweet potato
-cinnamon and pure vanilla
Directions:
1. Bake the sweet potato for 45 minutes at 400 degrees.
2. Spoon out the sweet potato and mix with eggs until a batter forms.
3. Add in cinnamon and vanilla to taste.
4. Using a 1/4 measuring cup, pour batter onto skillet or pan.
Voila! You have 4 delicious, healthy pancakes! Top with your favorite fruit, coconut oil, or almond butter for some added flavor.
Zucchini Pasta w/ Pesto
So I tried making zucchini pasta for the first time and I loved it! It is so easy to make if you have a Spirooli to get the zucchini into noodle shapes. I also added shrimp to my pasta for some protein. This makes 2 servings of pasta.
Ingredients for pesto:
-1 cup of fresh basil
-3 tablespoons of olive oil or coconut oil
-2 cloves of garlic
-sea salt
Ingredients for pasta:
-4 zucchinis
-1 pint of cherry tomatoes
-olive oil or coconut oil
-sea salt and pepper
Directions for pesto:
1. Add all ingredients into a food processor and blend. Add sea salt to taste.
Directions for pasta:
1. Preheat oven to 250 degrees.
2. Clean and cut cherry tomatoes in half. Coat cherries with olive oil or coconut oil and sprinkle with sea salt. Roast tomatoes for 90 minutes.
3. Use a Spirooli to create the zucchini noodles.
4. In a bowl, combine the noodles and the pesto sauce. Mix well.
5. Add the tomatoes to the pasta mix and serve.
